They contain more than 20 unique polyphenols called avenanthramides, which have strong anti-oxidant, anti-inflammatory, and anti-itching activity. Oat groats need to be soaked and need longer cooking time than rolled oats. They can be eaten as a side dish like pilaf, rolled into oats for porridge or using in bread making.
