Organic spelt grain is an ancient cereal grain which has a delicious nutty flavour. It is highly nutritious, being naturally high in fibre and protein. It is similar to wheat in appearance, but has a tougher husk than wheat which may help to retain nutrients in spelt. Spelt grain contains more protein than wheat, and the protein in spelt is easier to digest so wheat-intolerant individuals often prefer it. Spelt grain can be substituted for wheat grain. It is suitable for home milling, pilafs and salads. You could also try rolling it so it can be used as porridge. It can be cooked in a fast boil similar to brown rice – boil for 55 to 60 mins until tender. Or soak overnight for a quicker cook; or for using in pilaf or risotto.
